Ingredients:
1 cup flour*
½ cup sugar
1 teaspoon baking powder
6 Tablespoons butter, softened
¼ cup hot water
4 Tablespoons Corn Starch
1/3 cup cold water
1 ½ cups sugar
2 Tablespoons lemon juice6 cups fresh berries (I used 4 cups blackberries and 2 cups raspberries)
Directions:
Make sure your berries are clean, but don’t rinse if you don’t have to! If you are using blackberries and raspberries, keep them separated. Set aside.
In a saucepan, dissolve cornstarch in the cold water, add 1 1/2 cups sugar and lemon juice and bring to a boil, stirring occasionally. Add blackberries and return to a boil again, cook and stir carefully for two minutes. Turn off heat and add the raspberries, stir in to mix, then let sit for a minute on the burner.
Meanwhile, in a medium sized bowl, mix together the flour, 1/2 cup sugar, baking powder and butter. Slowly blend in the hot water.
Spoon berries into a 9x11 deep dish.
Top with batter, it won’t cover the entire top, don’t worry if it’s not pretty-it will be tasty!
Bake at 375 for 25 minutes or until the top is golden brown.
